asiago cheese (or parmesan)

Instructions
Preheat oven to 400
Heat the oil in a large sauce pan over medium-high heat
Add the chicken (seasoned with salt and pepper) and brown, abut 3-5 minutes per side,
before setting aside
Add the onion and garlic and saute until the onions are tender and everything is lightly browned, about 3-5 minutes
Sprinkle in the thyme and flour and cook for a minute
Add the broth and the Somerset Ridge Aphrodite, and immediately deglaze the pan by scraping the brown bits off the bottom of the pan with a spoon
Mix the asiago into the sauce and season with salt and pepper to taste
Add the chicken, cover (with a lid or foil) and roast for 15 minutes
Notes
Serve with Soft Polenta and a Caesar Salad.
