baby carrots

butter unsalted

honey
1/4
cup
Somerset Ridge Citron
1/4
tsp
salt or to taste
1/4
tsp
pepper or to taste

tbsp
parsley fresh
chopped for garnish
Instructions
In a large skillet, bring 1/2 inch of water to a boil.
Add carrots, cover and cook until carrots are crisp-tender.
Drain and set aside.
Make the glaze: In the same skillet, cook butter and honey over medium heat until butter is melted.
Stir in the Somerset Ridge Citron and bring to a boil.
Cook until the liquid is reduced to about 1/2 cup.
Add the carrots, parsley and season with salt and pepper.
Heat through and serve.
