Somerset Brittle with Candied Bacon

Ingredients
  

Candied Bacon
  • 12 strips thick cut bacon
  • 3 tbsp Somerset Ridge Ruby Port
  • 3 tbsp brown sugar
Brittle
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 tbsp unsalted butter
  • 2 tbsp Somerset Ridge Ruby Port
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 cup chopped pecans
  • sea salt for sprinkling

Method
 

For Candied Bacon
  1. Preheat oven to 400 degrees
  2. Place bacon strips on a foil-lined baking sheet
  3. Brush bacon with Somerset Ridge Ruby Port
  4. Sprinkle brown sugar on both sides of bacon
  5. Bake for 30-40 minutes or until sugars have caramelized, but bacon is not
  6. Chop bacon into small bite-sized pieces
For Brittle
  1. Spread the pecans on a baking sheet
  2. Toast pecans in the oven (400 degrees) for 6 minutes
  3. Line a baking sheet with parchment paper
  4. In a medium saucepan, combine the sugar, corn syrup, and water over medium heat
  5. Stir constantly until the sugar dissolves and the mixture starts to boil
  6. Cook on high, without stirring, until it reaches 290 degrees using a candy thermometer or boil until it turns a golden amber color
  7. Immediately remove from heat
  8. Quickly stir in butter, Somerset Ridge Ruby Port, vanilla, baking soda, bacon, and pecans
  9. Pour mixture onto the prepared baking sheet as quickly and thinly as possible
  10. Use a wooden spoon to spread it if necessary
  11. Sprinkle with sea salt right away
  12. Cool for at least 20 minutes
  13. Once it has set, break into pieces and enjoy!
